Recipe: Roast Beef Po' Boy With Homemade BBQ Sauce

One of the things New Orleans is known for is Po' Boy sandwiches with shrimp, oyster or long, slow-cooked roast beef. Today's recipe is with thin-sliced roast beef from the deli counter with a homemade barbecue sauce.

Ingredients:
1 pound of sliced roast beef
2 Tbs vegetable oil
1/3 cup finely diced onion
1 large minced clove of garlic
1 cup ketchup
1 Tbs mustard
3 Tbs Worcestershire sauce
3 Tbs apple cider vinegar
3 Tbs light brown sugar
Paprika
Tomatoes
Iceberg lettuce
Rolls or baguette

Procedure:
Add 2 Tbs vegetable oil to a heavy-bottomed stainless steel pot on medium to medium high heat and cook the finely diced onion and minced clove of garlic to soften.

At that point, add the ketchup, mustard, Worcestershire sauce, apple cider vinegar, light brown sugar and a good sprinkling of paprika and stir it all together.

Turn the heat to the lowest setting, add and stir in 1/4 cup water and then keep an eye on it as it slowly simmers along.

Next, thinly slice some tomatoes and julienne some iceberg lettuce. A large baguette could be cut it into individual sandwiches, or smaller long rolls can be laid out on a baking tray and popped underneath the broiler.

Keep your eye on the rolls, and once you're happy with the barbecue sauce, heat the roast beef up right in that pot.

Add a little of the sliced roast beef at a time and toss it to coat, until it is all in the pot and hot all the way through, and then serve.
